Please reply to this post with any ideas you may have.  
Here are some of my ideas:

1. Instead of paper or paper bags-keep recyclable bags in your truck
2.  Fill up your water bottles instead of buying bottled water
3.  Have various receptacles available for recycling trash & waste
4.  Have 1 day of Eco-education per month put aside for Drivers
5.  Literature available with tips on how to become more eco-friendly

Great ideas Jo!

I like your idea of carrying bags.

At home I have canvas bags that I use for groceries. I can't believe it never occurred to me to carry them on the truck as well!!!

We do refill water bottles. (I know there was a rumor going around online about the dangers of doing that, but it is a hoax).

It would be nice if truck stops did have cardboard and plastic recycle dumpsters. Our terminal has recycle dumpsters but we don't get to them on a regular basis.
